Sweet and Spicy Fried Cabbage

1/2 head of cabbage or 1 whole small head
1 medium onion
1/2 lb. bacon
1 Tbsp. brown sugar
2 Tbsp. red pepper flakes
1 tsp. salt
1 tsp. pepper

Start off by chopping your cabbage into bite size pieces. Dice your onion too.  Set aside.

Fry your bacon. When done, drain on paper towel and set aside, reserving the bacon grease.

Over med-high heat add your cabbage, onion, red pepper flake, salt and pepper and begin frying in the bacon grease.  Be sure and toss to coat all of the cabbage.  When bottom begins to brown, stir and add continue cooking.  You may want to add a lid for a few minutes to help cook the cabbage.

Add more oil if needed.  Add your crumbled bacon.

 You will begin to get some caramelization on the bottom of the pan.  You will need to de-glaze the pan (cabbage still cooking) with water, white wine or white wine vinegar or whatever you you have on hand. I just eye ball how much I use until the bottom is cleaned.

Add your brown sugar the last five minutes of cooking. Stirring well.  De-glaze one more time and get all those super flavorful bits off the bottom of the pan.
