Easy Artisan Bread



3 cups unbleached all purpose flour
1 3/4 teaspoons salt
1/2 teaspoon yeast
1 1/2 cups water

In a large mixing bowl, whisk together flour, salt and yeast. 

Add water and mix until a rough mixture forms.  Cover bowl with plastic wrap and set aside for 12 - 18 hours.  Overnight worked for me. 

Heat oven to 450 degrees.  You want to put your empy cast iron dutch oven and lid in for 30 minutes to heat up.  If you don't have a dutch oven, don't worry. A glass Pyrex dish will work fine, as long as it has a lid. 

Meanwhile, place your dough onto a floured surface and shape into a ball.  Cover with plastic wrap and let rest while the pot is heating. 

Remove hot pot from the oven and very carefully place your dough inside.  Cover and bake for 30 minutes.  Remove the lid the last 10-15 minutes and finish baking uncovered.


Cool on a cooling rack.  That's it.
