Old Fashioned Bread Pudding



10 slices white bread, cubed or torn
5 tbsp. melted butter
1/2 cup raisins
1 tsp cinnamon
5 eggs
3/4 cup sugar
2 tsp. vanilla extract
1/2 tsp. salt
3 cups hot milk
few pinches of brown sugar (for the topping)

Preheat oven to 375 degrees. 

Tear your bread into half dollar sized pieces and toss in your baking dish, a 9x13 will be perfect. (I had some homemade bread, about a 1/2 loaf I'd say. It worked wonderful!)

Melt your butter with the cinnamon and raisins included.  Pour melted butter, cinnamon, and raisins over bread and mix until combined. (Right in the middle of me making the dish, guess who realized she did not have any raisins?? [insert bleep here $%^&] ).

Measure out your milk and heat.  You can put it in the microwave for 2-3 minutes. In the mean time, in a separate bowl, whisk your eggs.  Add your sugar and vanilla and salt to your eggs and whisk again. 

Add hot milk cup by cup to your eggs mixture, stirring between each addition. Pour over your torn bread.  Add a few pinches of brown sugar to the top, it makes for a nice crunch factor.

Bake for 30-40 minutes or until golden brown. Before removing from the oven, I will take a fork and pull back a bit of the top layer in the center of the dish.  As to be "peaking" inside.  Make sure the center is "set" and not runny.  You may need to bake for 5 more minutes.  Remember, that it will continue to cook itself even after you take it out of the oven.  So don't over cook it.


Here's a few different recipes for you for the Caramel Sauce. I have tried all of them and the Simple Caramel Sauce seems to work fine for me.  (Psst....I've even used the jar of  Smuckers Caramel , just heat and drizzle :) We are all entitled to short cuts!





Simple Caramel Sauce


2 cups brown sugar
1 can (14 oz size) sweetened condensed milk
1 stick of butter (1/2 cup)
1 tsp. vanilla extract
1/2 cup of milk, more if needed

For a Rum Caramel Sauce~simply follow the same directions, except substituting a 1/2 cup of Rum for the 1/2 cup of milk.

Stir sugar and condensed milk together; heat over low to medium heat, stirring constantly, keep stirring until the sugar has dissolved. Remove from heat. Add butter and vanilla and stir well. Add milk and stir well. Drizzle over your bread pudding.
