Strawberry Jam (using frozen strawberries)


makes eight 8-ounce jars, plus a little bit more

5 cups crushed frozen strawberries
7 cups granulated sugar
1 package SureJell Fruit Pectin
1/2 tsp. butter, optional

 Measure sugar into a bowl, set aside. Stir pectin powder into the mashed berries in a big pot and bring to a full rolling boil (a full rolling boil is a boil that will not settle down when stirred), stirring constantly.

Add sugar, stir constantly until it returns to a full rolling boil again, boil for 3-4 minutes (this insures your sugar will dissolve).

When your minutes are up, remove from heat and fill your jars, fill to within 3/8″ of the top.

Wipe jar rims with a clean, damp paper towel. Immediately put lids on and screw down hand tight.

Process in a boiling water bath for 12 minutes. Make sure the water covers all of your jars completely.
