3 Ingredient Buttermilk Biscuits



3 c. Self-Rising Flour + extra for counter
1/4 c. Vegetable Oil
1 & 1/4 c. Buttermilk

Place 3 c. flour in a large bowl. Using your hand or a wooden spoon, make a well in the middle. Pour your oil into  the well.

Slowly add the buttermilk and use a fork to combine. Don’t worry if it’s clumpy. Use your hand to knead it into a dough ball.

Turn out onto a lightly floured surface. Roll it out. If you want big and fluffy, leaving it fairly thick. For a thinner biscuits, roll it thinner.  Use  biscuit cutter to cut out circles and then place them on a baking sheet. Don't have a cutter, a tin vegetable can (open both ends) works fine too.

Put on your sheet of biscuits on the cook top to rise while your oven is preheating. 400.

Bake for about 10 minutes. That's the best time for my oven.

How's about making a quick breakfast for the next few days?  Well, OK then!

 While your biscuits are baking:
Fry up your bacon. Drain on paper towel. I used 1 piece of bacon for 1 breakfast biscuits, you could do more, or use sausage patties or ham. Yum!

Spray your muffin tin and crack your eggs into the wells. Sprinkle with some cheddar cheese, lil' salt and pepper.  I like the texture of a fried egg, you know the whites, so I didn't whisk the egg.  You absolutely could and you would get more of an omelet texture.

                                            
When biscuits are done, turn the heat down to 350 and bake your eggs.  This will take about 5-10 minutes. Keep an eye on them.

Now, get you an assembly line going, organization is your friend.



Assemble and wrap with saran wrap. And Viola'...breakfast on the go is ready for a few days.
 

I keep these in the freezer and take 1 (or 2) out the night before.  Microwave until warm. 30 sec. or so.  I like jelly on mine :)
