Simple Pea Salad

2 cups fresh, canned (drained) or frozen peas, thawed
1 hard-boiled egg, chopped
a handful of dices or shredded cheese
3 strips cooked and crumbled bacon
2 tablespoons mayo
1-2 tablespoon chopped onion
2 teaspoons rice wine vinegar
salt and pepper to taste

Start off by whisking your mayo, vinegar, salt and pepper together.  Pour over the rest of your ingredients and gently mix.  Refrigerate until ready to serve.
