Bacon Fried Green Beans




3-4 pieces of bacon- chopped 
3 tbsp bacon drippings
2 lbs green beans
about a 1/4 of an onion, diced
5 cloves of garlic- chopped

1/2 tsp of salt

Fresh black pepper

(Note: DO NOT try this method with canned green beans, no workie!) 


Start off by frying your bacon up, rendering the fat, don't discard the bacon drippings, it's what you will be frying your green beans in. Got your attention, didn't I? I had you at "Bacon", I know.

Remove your bacon and set aside.  Depending on what brand of bacon your using, you may need to drain some, you want only 3 tbsp of grease, maybe a little less depending on how many beans your frying up. Just eye ball it.

Go ahead and prep your beans, if using fresh (not frozen, they come already groomed). Wash and snap the tips off, if you want.

Over medium heat, add your wet green beans and diced onions and cover. The little bit of water on beans will help them steam.

Cook for about 5 minutes, without stirring, unless you think some my start to burn. Remove the lid at this point and add your garlic and pepper and crumbled bacon.

Cook a few more minutes until desired done-ness.  I like mine just a tad undercooked, I like the slight crunch.

Salt to taste. 

Some additions you could add in too: Slivered almonds or ground sausage, sliced kielbasa sausage, diced potatoes, MORE BACON!
