Beef Tips and Gravy


1 package egg noodles
1 lb of beef tips or stew meat, cubed
2 packages of brown gravy mix
8 oz package of sliced mushrooms
1 medium onion, sliced

Season your cubed meat with salt and pepper and place in cast iron dutch oven.

Prepare 1 package of your gravy mix and cover the meat.  If you need to add a bit of water so it does cover the meat, that's fine too. The extra water will cook down.

 Bring it to a boil and then turn heat down to simmer. Cover and leave for an hour.

After your hours is up, add mushrooms and onions (if using) and return to simmer for another hour, until the meat is fork tender.

  Mix the last package of  brown gravy according to directions.  Pour over beef tips and mushrooms.

 If you feel like you'd like it a bit thicker, continue cooking uncovered until the consistency is just right for you.  Or, you can mix a little water and cornstarch and add it to the pot.

Cook egg noodles according to the package.

This by far can be done in the crock pot as well. Simply place your meat and mushrooms and sliced onion in the crock and cover with your prepared gravy mix. Low and slow for 6-8 hours.  Prepare your egg noodles according to package directions and, welp, bless it and serve it up!

P.S. This is just as delicious using rice instead of noodles. Mmmm Mmmm!
