Freezer Breakfast Burritos




6 oz breakfast sausage, or bacon
1/2 cup milk
1 tsp salt and cracked pepper
8 large eggs
1/2 cup shredded cheese
diced red pepper
diced onion
2 medium potatoes (shredded and fried, hashbrowns that is)
16 flour tortilla, small to medium size

Optional additions: spinach, mushrooms, jalapeno's or some diced tomatoes or salsa. Great way to sneak in some veggies. (I won't tell if you don't).

Cook sausage (or bacon) in skillet on medium heat until completely cooked through; remove from pan, don't drain and set aside pan of grease.  Shred your potatoes, strain and get out as much liquid as possible, yes, this can get messy. Add onions and fry in your reserved sausage (or bacon) grease. When cooked thoroughly and crisp, remove from skillet and set aside.

Whisk the milk, seasoning and eggs together. Cook in a skillet to a scramble on stove top. Just before the eggs are finished add in the cheese, peppers, onion or any other "add-ins" of your choice. 

Take your flour tortillas and lay them all out on the counter, I prefer to grill mine before filling. Spread the mixture evenly into each tortilla. Wrap up like a burrito, tucking in both ends before rolling and lay onto a cookie sheet to freeze.  Freeze overnight or at least for a few hours and then once they are individually frozen you can wrap each with saran wrap and store them all together in large zip loc bags.

Reheat in microwave (time really depends on your individual microwave, mine reheats mine in about 1 minute (flipping the burrito once during reheat).

This is a great on-the-go breakfast, for the whole family.  I hope you enjoy them as much as I do, they have sure saved me some time in the mornings.
