3 Minute Cheese Enchiladas

The quickest and easiest cheese enchiladas you will ever make.

3 corn tortillas (flour tortillas will work just fine)
3 slices of cheddar cheese  (or a handful of shredded cheese per enchilada)
¼ cup red enchilada sauce (or green enchilada sauce, if you prefer)
Some other additions:
baby spinach
black olives
chopped white onion
sliced jalapenos
sour cream (room temperature)

Warm your tortillas a few seconds before adding your goodies. This will soften them up and make it easier to work with.  Now, fill your tortillas. Add your cheese, shredded or sliced. Which ever you have on hand. If you choose to add any additions, toss 'em in here. I like to drizzle a little of the enchilada sauce inside too. Now, get to rolling. Roll your enchiladas up, place seam side down on a microwave-safe plate. Top with more enchilada sauce and cheese.

Place plate in the microwave 1.5 minutes. Check the enchiladas and return to microwave for 1 to 1 1/2 more minutes. Tada!
