Peach Jam

                                                         Makes about six 8 ounce jars.

4 cups - finely chopped peaches (pitted and pealed)
2 tbsp - lemon juice
1 - package of regular powdered fruit pectin
5 cups - granulated sugar

 Prepare canning jars and lids. Fill an 8 quart pot and bring to a boil.
 In a large stainless steel saucepan, combine peaches and lemon juice.
 Add the pectin and whisk until it is dissolved.
 Bring to a boil, stirring frequently.
Add sugar and return to full boil.
 Boil hard for 1 minute - stirring constantly.
 Remove from heat and skim off the foam.
Ladle the hot jam into the hot jars.
 Remove the air bubbles.
 Wipe rim of jars.11. Place lids on jars and screw down the bands.
Place jars in water bath and make sure they are completely covered with water. (Use your canning tongs and be very careful.)
  Boil for 10-12 minutes.
 Remove jars, let cool and store.
